TIME TO BAKE MALTED MILK BISCUITS

At first, the steeping process takes place in which specialty grain is soaked and crushed   in hot water to extract color and some flavor compounds from the grain.  The steeped grains are then moved to a room where temperature and humidity are carefully maintained to ensure that the grain germinates evenly.  The enzymes involved in this steep are responsible for the degradation of starch in the extraction process.

The germination process is halted by kilning when the optimum degree of enzyme production and starch modification has been attained. All these steps end up at a product called wort. The wort is then concentrated by evaporation under vacuum until the desired moisture content is reached. Colour and flavour, sweet essence etc. can be controlled by altering residence time at this stage. Atlast the liquid malt extract is filtered, cooled and packaged in different sizes. A dry malt extract powder is also produced by processing the wort in a spray-drying tower.

200 g/ ⅞ cup Butter

300 g/ 2 ⅓ cup Plain flour

50 g/ ⅓ cup Rice flour

200 g/ 1 cup Golden caster sugar

1 Egg 

½ tsp Mahalaxmi’s Vanilla extract

¼ tsp Salt

 Instructions 

The first step is to beat together - butter, sugar and malt powder 

Beat again after adding egg and vanilla extract.

Now Sieve the flour & salt into the bowl and stir to combine. Be careful not to overmix else the dough will end up tough.

Knead the dough properly and then flatten it into a disc, wrap in clingfilm.

Chill it for at least 1 hour

After chilling it, roll to 5mm thickness and cut different shapes for biscuits as per your desire.

Place the pieces at least 2 cm apart on baking sheets lined with baking parchment and then chill for 30-45 minutes

Preheat the oven and cook them for 20-22 minutes only until they start changing their colour.

Then remove them from the oven and let them cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

CONVERSION OF LIQUID AND DRY MALT EXTRACT

Malt Extract, as an ingredient, is present and is used in basically two forms: Liquid malt extract and dry malt extract.

Liquid malt extract is the form of malt extract that is yellowish brown in color and is free from any adulterants, odour, foreign flavor and impurities.

As the two types of malt are different in water content, a pound of liquid extract and a pound of dry extract differ in sugar content as well. Therefore, LME and DME are not casually  interchangeable in a recipe. However, the conversion between the two is quite simple.

Conversion between liquid malt extract (LME) to dry malt extract (DME)?

The ratio for use between the dry and syrup forms of malt extract can be approximated as follows: Liquid malt extracts are roughly 20% water so 1kg of liquid is the same as 800g of dry malt extract. If you want to convert a recipe that lists LME then multiply the amount by 0.8 to achieve the amount of DME required. If your recipe list is dry then divide the amount by 0.8 to reach the amount of liquid extract needed. To explain it better, here is an example:

3kg of LME = 3 x 0.8 = 2.4kg of DME

3kg of DME = 3 / 0.8 = 3.75kg of LME

Process of Manufacturing of Malted Milk Food

 Malted milk food is a product made by combining whole milk with the liquid which is separated from a mash of ground barley & wheat flour in such a way as to secure full enzymatic action of the barley malt extract. This type of food also contains added sodium chloride and potassium bicarbonate.

 


In simple terms, Malted Milk Food is a powdered dinner, best suitable for getting ready different wholesome wellbeing supplements. This powdered dinner is prepared from a blend of malted grain and wheat flour, in this way treating the blend till it transforms into a fine substance.

Process of Manufacturing of Malted Milk

Malted milk is the malt product prepared with the mash liquor resulting from a mash of barley malt and wheat flour. Malted Barley is diastatic in nature because of which starch gets converted into sugar.  The process of malted barley is majorly divided into four steps:

i. Mash liquor production: 

At first,  the malted barley is filtered to remove dust and other foreign matter from the barley. Then the crushing step takes place using an in-line roller mill and mixed with high-grade wheat flour. After conveying the mix to the mash tanks water  is continuously added at 40°C - increased to 70°C within about 40 min-  to prepare a uniform slurry. The slurry is held at 70°C for about 35 min and during this process the starch present in it is hydrolysed by diastase, while the complex cereal proteins are converted into simpler protein substances. After this the slurry temperature is again raised to 78°C and is held for about 20 min to stop further activity of enzymes and also to achieve maximum cereal solids. The mash is then finally passed through a centrifugal separator to remove the insoluble husk and to obtain clear liquor, known as ‘wort’.

ii. Mix preparation: 

Now that the wort has been prepared, it is mixed with predetermined quantities of standardised milk, diluted malt extract, sugar, salts, minerals and vitamins in a mix preparation tank.  The percentage and the amount of contribution of each ingredient depends upon final formulation of the product.

To increase nutritional value of the product by providing high quality fat,proteins, minerals and vitamins - Milk solids are added. 

To enhance flavour and energy level of the final product - Milk fat is used. 

Salts are added to the wort to optimise product pH to improve digestibility, and to provide essential salts, especially calcium. . 

Malt extract/barley malt powder provides desired level of colour and typical caramelised flavour to the finished product. 

iii. Evaporation and drying:

The product, after the removal of around two-thirds of the water content, is then transferred to a steam jacketed evaporator in order to facilitate the removal of the water and to prevent excessive caramelisation. The mass product is dried and the dried product is then cooled down in an air-conditioned room to avoid moisture pick up, scraped off the trays and milled into fine powder. Then it is transferred to inline mixers to mix salts, dry vitamins and minerals and then packed in bottles or refill packs.

iv. Spray Drying of Malted Milk: 

Tray-drying method generally used in preparing malted milk food under vacuum is a batch operation which ultimately increases the cost of the product. On the other hand the Spray drying method is comparatively cheaper owing to the high volume of continuous and automated operation.

Ingredients:

1 cup semolina

1 cup ragi flour

1 tbsp salt

Ragi Malt

1 cup water

1 cup curd

1/4 cup ragi flour

2 cups water

1/2 tbsp Salt

1/4 cup Buttermilk

Steps to make ragi idli

To prepare Ragi idli, first dry roast the rava on medium flame for 2-3 minutes.

Now cool them off completely before making idli.

Transfer this dry roasted rava to a large bowl.

Add ragi flour to it, then add salt and curd. Also add water as required depending on curd thickness.

Give the paste a good mix and allow to soak for 30 minutes.

After the mix is ready, Brush the plates with oil and pour the batter immediately into the idli plate. Steam it for 8-10 mins on medium flame.

Then allow it to rest for 5 mins then unmould.

Finally, it's time to serve hot idli with coconut chutney or sambar.

Now time to make RAGI MALT - Boil water in a pan.

On the other side add 4 tbsp of flour in a glass of water and mix well without lumps.

Once water is boiled add this mixture by stirring it continuously so that it won’t form lumps. After it turns into smooth consistency, off the stove and let it cool completely.

After it gets cooled down, add salt and buttermilk and milk well.

Take it into a serving glass and VOILA! Time to have it.

Keep stirring and cook until the prepared mixture gets glossy and thick.

Now it's time to add jaggery or any other sweetener as per your liking. Jaggery can be added in the ragi malt instead of sugar. But in the absence of jaggery, you can also use sugar.

You can conjointly add milk here. Then slowly mix milk to the mixture.

Keep stirring and then add dry fruit powder or almond powder.  I always add cardamom powder and a few almonds or cashews.

5-  Now it's time to make about 50 small biscuits and Store it in an airtight container to maintain crispness.

MANUFACTURING OF MALTED MILK

 You all must have heard about Malted Milk food. But do you know how malted milk is processed? Today we will discuss Manufacturing of Malted milk food. Malted milk food is a product that basically contains milk solids, malt extract and cereal grain flour. It was first developed by William Horlicks of Racine,Wisconsin, U.S.A in 1883, but was commercially marketed in 1887. The main reasons behind this product’s success are its nutritive value, convenience, digestibility and palatability. 


 
The preparation/process of malted milk generally revolves around four major steps:

I. Mash Liquor Production: The malted barley provided by Barley Malt Suppliers is first  sieved to remove dust. It is then crushed using an in line roller mill and mixed with high-grade wheat flour. After the mix is ready it is conveyed to mash tanks, where water (at 40°C) is continuously added to prepare uniform slurry. The slurry is continuously heated and stirred at a certain temperature which gradually increases to 70°C within about 40 min and is held at 70°C for about 35 min. The starch is then broken down by diastase, present in malted barley, into maltose,dextrin and malto-dextrins, while the complex cereal proteins are converted into simpler protein substances. The slurry temperature is gradually raised to 78°C and held at this temperature for about 20 min to stop further activity of enzymes and also to achieve maximum cereal solids (28-30%). The resultant mash is passed through a centrifugal separator to remove the insoluble husk and what we obtain is a clear liquor, known as ‘wort’.
 
ii. Mix preparation: The wort derived from the first step is mixed with predetermined quantities of standardised milk, diluted (85°C) malt extract, sugar, salts, minerals and vitamins in a tank specifically used for mix preparation. Milk solids help increase the nutritional value of the product by providing high quality nutrients like fat,proteins, minerals and vitamins and enhances flavour and energy level of the final product. Malt extract suppliers provide the desired level of colour and typical caramelised flavour to the finished product. In this mix salts are also added to optimise product pH to improve digestibility, enhance flavour and to provide essential salts, especially calcium.

iii. Evaporation and drying: The mix is concentrated in the vacuum evaporator at about 26% solids until one half to two-thirds of the water content has been removed. The product is then transferred to a steam jacketed evaporator provided with stirring gear, where a high vacuum is maintained, agitation being constant in order to facilitate the removal of the water and to prevent excessive caramelisation. The concentrated mass with an average of 80% solids is finally dried within a level of 2% moisture to a sponge-like, swollen mass usually in a vacuum tray dryer. Then the dried product is cooled in an air-conditioned room to avoid moisture pick up, scrapped off the trays and milled into fine powder. The milled product is conveyed to inline mixers to mix salts, dry vitamins and minerals and is then packed in bottles.
 
iv. Spray Drying of Malted Milk: The malted milk food is generally prepared by tray-drying method under vacuum as mentioned above and hence adds to the cost. Spray drying method on the other hand will reduce the cost of product owing to high volume of continuous and automated operation.  In view of product quality and hygienic standards, the spray-drying process is a potential future technology for drying malt-milk based food products to meet national as well as international requirements.

Only a small fraction of milk produced in India has found its place in malted milk manufacture. Though a potential market exists for malt based milk beverages and Malt Extract Liquid in India, very few factories and companies like Mahalaxmimaltextract  have undertaken its production.

Malting

In this Brewing grains are soaked in water to accelerate germination. However, just before the barley fully sprouts, it is heat dried and in most cases roasted or toasted to varying degrees. Although this step prevents the growth of barley seedlings, it still retains important enzymes in the barley malt.



Mashing

In this step, crushed grains are mixed with water to form a porridge-like mixture called the “mash.” This mash is then cooked at precise temperatures to release the goodness from the barley grains and this goodness is primarily sugars, enzymes and proteins. Depending on how the barley is malted, a mashing process is designed to make the material as much soluble as possible available in the wort, while avoiding undesirable characteristics.

Extraction

Once the mashing has been completed the resulting liquid is further subjected to evaporation to reduce its mass and make it more concentrated. Although most extracts are liquid based, some malted barley powder manufacturers prepare dry extracts as well. This is done by taking a reduced mash and spray drying it into a powder.
