MALT POWDER AND MALTED MILK POWDER - NOT THE SAME PRODUCTS

 Malted milk or drinks with liquid malt extract must be the drink for most of you. Whenever malt drinks are talked about, immediately the childhood memories pops up and we wonder if malted milk powder and malt powder are  the same thing.



The easy and straight answer to this question is NO! NO! and NO!


Malt Powder and malted milk powder are not the same products. The former is made from wheat flour and another grain, usually barley and the latter i.e. malted milk powder is malt powder with milk solids added to it.


Throwing more light to these products - Malt powder, as mentioned above, is made from grains that have been allowed to sprout. These grains are steeped in water to encourage them to germinate and are then air-dried to halt the process. This short germination period helps the grains stimulate so that a certain type of enzyme can be released which ultimately breaks down its starches into sugars, creating a sweeter flavour. In the next step, the grain is dried and ground to produce a fine powder. 


Malt powder is basically divided into two forms: diastatic malt powder and non-diastatic malt powder. Diastatic malt powder is the form of malt powder which contains active enzymes that help the starch to get converted into sugar. This action can accelerate the rising process and make products like bread rise more quickly. The other form of malt powder is Non-diastatic malt that does not contain any active enzymes and is usually available as a syrup. It is only used for that distinctive malty flavour and deep caramel colour. 


If you are looking for a product which can add a touch of natural sweetness to your bread, along with a browner crust and a glossy sheen, then malt powder could be that magic ingredient.


Malted Milk Powder


Malted milk food means the product obtained by mixing whole milk, partly skimmed milk or milk powder with the wort separated from a mash of ground barley malt, any other malted cereal grain and wheat flour or any other cereal flour or malt extract with or without addition of flavouring agents and spices, emulsifying agent, eggs, protein isolates, edible common salt, sodium or potassium bicarbonate, minerals and vitamins and without added sugar in such a manner as to secure complete hydrolysis of starchy material and prepared in a powder or granule or flake formed by roller drying, spray drying, vacuum drying or by any other process. It may contain cocoa powder. It shall be free from dirt and other extraneous matter. It shall not contain any added starch and added non milk fat. It shall not contain any preservative or added colour. Malted milk food containing cocoa powder may contain added sugar. Malted milk food shall also conform to standards.


So, the next time you find yourself munching on malted milk balls or enjoying your morning bagel, you will surely understand the difference between both varieties of malt powder.
