Biscuits are one of the most popular snacks, liked by people of all age groups, not only in India but in many countries all around the world. Today, finding someone who can resist the tempting and alluring aroma of biscuits will be quite difficult. Biscuits come in many forms and shapes but each one needs the mix of right ingredients and right processes to give the desired results. As for factory production, there are majorly four stages including mixing, forming, baking and cooling. Mixing is one of the most important steps here because if the right ingredients are not mixed in the right proportion then you won’t get satisfactory results.

But sometimes we want something more and readymade biscuits don’t stop the cravings. That’s when we crave homemade biscuits made with malt extract - used in biscuit mixes as a replacement of refined sugar to give sweet essence and nutty flavour. So let’s make homemade biscuits to stop your cravings.

Ingredients:

145g unsalted butter

60g Biscuit Malt/Malt Extract

2.5g vanilla extract

185g plain flour

2g bicarbonate of soda

Process

First, Preheat the oven. Blend butter, biscuit and confectionery grade malt extract and vanilla together until it gets soft. Then knead a smooth dough by mixing in plain flour and a pinch of bicarbonate of soda. Make a ball of the dough, wrap it in plastic wrap and leave it for around an hour.

Now roll the dough to 4mm thickness and cut to a shape whichever you like. Grease the baking tray and place the biscuits on the same to bake around 8-10 minutes. Remove the tray from the oven and let it cool down completely.

Voila! Your Biscuits are ready to eat. If you like creamy biscuits, then you can also make the cream of the biscuits to put on the biscuits.

SHARE YOUR FIRST TIME BREWING EXPERIENCE WITH MAHALAXMI MALT PRODUCTS PRIVATE LIMITED

First time brewing? Seems difficult? But don’t worry, it's not as difficult as it looks if you keep various steps and precautions in mind. Brewer should be mindful of three important things which includes Cleanliness, Preparation and Good Record Keeping

Cleanliness: First and the foremost concern of the brewer is/should be cleanliness. As the step of fermentation includes the manipulation of yeast, providing clean and good growing conditions to yeast will also provide good and clean growing conditions to other microorganisms, including bacteria. Also before starting brewing, make sure the fermenter and all other required equipment are well cleaned and sanitised.

Preparation: Brewing is a time taking process and needs patience. You can not brew well hastily.

Record Keeping: It is good to always keep notes on what ingredients, amount and times were used in the brewing process so you can not repeat if there were any mistakes in the previous try.

Beer making involves four basic steps:

Preparation

Brewing

Fermentation

Bottling

Step 1 - Preparation

First step involves gathering brewing equipments such as Fermenter, Brewing kettle, Funnel, Auto-Siphon, Stir spoon, Individual ingredients.

Then sanitise the equipment and make sure all the equipments are properly clean.

Step 2 - Brewing

In this step, steeping of grain will take place. After grain steeping is done ,bring a kettle to boil and once it is done remove the kettle from heat and add malt extract (Making of malt extracts can be a tedious process so brewers use Malt Extract/Liquid Malt Extract/Malt Extract Powder in India of Mahalaxmi Malt Products Private Limited to brew). After the malt extract is dissolved, boil it again. After it is boiled, add hops to it. Cool down the resulting product - the sugar water, also known as wort.

Step 3 - Fermentation

Third step involves pouring cooled wort into the fermenter. Add water, Aerate wort and finally add yeast (preferably dry yeast) to the fermenter and seal it air tight.

Step 4 - Bottling

Within two weeks, fermentation will be done and that is when the final step of bottling will take place. Boil the primary sugar and then add it directly to the bottle after it cools down. Then siphon the beer out of the fermenter into the bottling bucket. Finally cap the bottles and store the bottles.

Bingo! You did it. Time to refrigerate it and enjoy.

GIVE YOURSELF A TREAT OF WHEAT | MALTED VS. UNMALTED WHEAT GRAIN

Wheat is a cereal grain which is widely grown and consumed all around the world. The major components of wheat are proteins, starch and cell wall polysaccharides which together account for a major portion of wheat. The rest is the combination of minor components such as vitamins, minerals, etc. Wheat malt grain is most commonly used in malt extract liquid/ Liquid Malt Extract, muffins, breads, noodles, pastries, crumpets, biscuits, cakes, , Biscuit Confectionery Grade Malt Extract, cereal bars, sweet and savoury snack foods, sauces, brewing and various other alcoholic and nonalcoholic beverages,

Beer and beverages use both malted and unmalted wheat grains depending on requirements. But ever wondered how malted wheat grains are different from unmalted wheat grains?

Malted Wheat

The diastatic enzymes present in malted wheat helps convert starch into sugars during mashing which gives it a unique flavour and makes it a creamy, doughy tasting wheat flour. Similar to barley malt, the flavour compounds are developed during the process of kilning. Grains go through the process of steeping, germination and killings before they are used by brewers.

Unmalted Wheat

Unlike Malted wheat, it does not undergo any process of malting which is why it is known as the raw version of wheat. The amount of starches are same to that of malted wheat but unmalted wheat can not convert starches into sugars by itself. For sugar conversion, it needs to be mashed with base malt.

Malted Vs. Unmalted wheat

Process - Malted Wheat is fully modified wheat and thus becomes malted grains whereas unmalted wheat is not modified and thus needs extra efforts to convert scratch to sugars for brewing.

Self-Conversion - Malted Wheat can get self converted due to the availability of diastatic enzymes. On the other hand, unmalted wheat can not go through self conversion.

Flavour - Unmalted wheat makes fuller beers which are less sweet and have a refreshing taste. It has strong flavour and is used for adding flavour, cloudiness and creamy texture to the beer. On the other side, Malted wheat has a citrusy and acidic taste which gives it a complex flavour.

Both these types have their own pros and cons and are used as per needs. As now you know the difference between malted and unmalted wheat grain - Use whichever fits the best to your needs.
