REFRESH YOURSELF WITH MAHALAXMI MALT EXTRACT’S MALTED MILKSHAKE

I am not a cooking lover but on this sunny day, I suddenly started craving for something chill like an ice-cream or cool milkshake etc . So, I finally decided to try making a malted milkshake.

Malted milkshake is a regular milkshake with barley malt powder or barley malt extract made from a mixture of malted barley, wheat flour, and evaporated whole milk. This powder (also known as dry malt extract or malt extract powder) is used to add its distinctive, nutty flavour to beverages and other foods but can also be used in baking, pharma, flakes etc. In other words, Malted milkshakes or various other malted milk foods in India are  prepared with low fat milk, malted milk and ice cream are simply yummy and healthy too. The addition of chocolate syrup, although in small amounts, in its preparation gives malted shake an extra chocolate flavour.

These malt based foods come in various flavours such as  chocolate malts, vanilla malts etc. They seemed fun to decorate so I used colored sprinkles, whipped cream, chocolate sauce, and a maraschino cherry on top.

Since I was trying it for the first time, I was quite nervous. I finally started with getting the chocochips melted in the microwave to make a rim around the glass.I did this on a paper plate so I could save some cleaning time. Then it's time to Dip the rim of the glass in the chocolate, and have another plate with sprinkles ready.

The next step is to place the glasses in the freezer while making the malt. This is done because it helps set the chocolate, and keeps the sprinkles on the glass, and not on the floor .

OK! Time to focus on milkshakes. I chose the combination of ice cream, milk, Mahalaxmi Malt Extract’s chocolate syrup, and Mahalaxmi Malt Extract’s  malt powder and put them into a blender to mix. After getting a perfect mix, I added whipped cream, more chocolate sauce as a drizzle, some sprinkles, and a cherry on top and VOILA! We are done……Try it, and let us know how’s it.

TIME TO TRY LIQUID MALT EXTRACT

Malt extract is the concentrated and condensed sugar extracted from malted grain and is majorly used to create wort by homebrewers. People sometimes assume that using malt extract will automatically make the beer taste better which might not be the case every time. Malt extract is not the only thing that makes the beer taste better as it also depends on the equipments used by brewer, their equipment, their skill level, their time availability, and a number of other factors, i.e. it majorly depends on their personal preference but it does surely play the role of a major ingredient BIG TIME!

Usage of malt extract is not limited to brewing but is used as various other forms such as Biscuit Confectionery Grade Malt Extract, flakes grade malt extract etc. But the question here is exactly what type of extract is best for your brewing situation or the recipes you are using it in ?

Basically malt extract is available in two types: liquid (commonly known as LME) or dry malt extract (commonly known as DME). But today we are gonna talk only about LME.

Malt Extract Liquid, also known as Liquid Malt Syrup, is the syrup in which the water content is usually around 20%, with the other remaining 80% composed of sugar and unfermentable solids that are important to brewers. It is a goopy, molasses-like syrup which simply creates a more pleasant flavour in beer, and In recipes calling for large amounts of malt extract.

It might feel hectic to get all the LME into the boil, but it can easily be done by swishing around some hot water in the container to get all that sugary-goodness. LME can be purchased in sealed tins and pouches which can be stored for a long time. It is said to have a shelf life of up to two years under ideal conditions (cool, dark and dry), it does have the tendency to experience degradation over time. Most containers of Liquid malt extract state that malt extract will darken with heat and age.

LET’S FIND OUT THE TASTE OF MALT

Normally when we hear about the word malt - images of beer and other alcoholic beverages pop up in our heads. But malt is not just about beer but has a very wide scope. It is present in various other food recipes in various forms such as Flakes Grade Malt Extract, Bakery Grade Malt Extract, Malted Milk Food Manufacturing etc. But if someone asks you to describe the taste of malt it might get a bit difficult for you. Malt taste can be described as having a combination of flavours which describes the taste similar to toast, caramel, coffee or fruits like raisins and is very soothing and is nutty and sweet at the surface. However, what describes the overall taste are the ingredients used.

For example - the reason for the malt to be sweet and having a dessert-like taste is barley (which malt is made from). Although barley is the most common ingredient/grain in malt making, other grains can also be  used - such as rye, wheat, etc.- to make malt because of its high enzyme content.

Malt and beer usually go hand in hand as malt is present in just about all beers and the beers with the most distinct malt taste are usually the darker beers. Here we can say that to experience the authentic taste of malt, what you should go for is a mug of dark beer as in dark beers, the roasting of the malt is light with the perfect consistency and has a fine taste of roasted caramel with the right amount of sweetness.  On the other hand, when the beer or drink is lighter that means the taste of malt will also get lighter.

So overall there are various malt flavours and tastes that move from the weakest to strongest. The weakest malt flavour is Pale straw or golden in colour and is similar to white bear. It is a light, sweet and prominent flavour from yeast that can give you a smooth mouthfeel. Moving to the strongest malt flavour - It is deep brown or black in colour. It has a dark bread or black coffee like taste. Also chocolate or coffee can enhance the malt flavour of this beer.
