WHY USE MALT EXTRACT IN BAKED PRODUCTS?

Malt extract, which is also known as extract of malt, is a rich source of soluble fiber, combining many characteristics that improve baked goods.  Malt Extract has been used for years in baked goods. Like in  bread to benefit its colour and flavour, which also helps in enhancing their handling properties.

Malt Extract is also an antioxidant which helps improve digestion by optimizing good bacteria and minimizing bad bacteria and enhances the stability of vitamins in bakery goods. It helps improve the crumb structure, volume, and tenderness of bread. It supports the effects of other active baking ingredients, can partially compensate for fats and protein, and can improve shelf life and dispersibility in an aqueous system like doughs and batters. On a gram-for-gram basis, malt as an antioxidant rank five times higher than that of broccoli. Because malt extract is made from malted barley and water only, this non-GMO, minimally processed, clean-label ingredient qualifies as the perfect complement for whole grain foods. It carries many essential minerals, vitamins and amino acids. It is a “good” source of dietary silicon, B vitamins, magnesium, selenium and manganese. The liquid extract functions as a natural colorant, and it masks bitter notes and enhances nut, savory and chocolate flavors. Oh, yes! It also provid
es sugars and other nutrients to fuel the yeast that leavens baked foods. Not only this, Studies show malt extract facilitates the growth of probiotic cultures that can enhance digestive health by supporting the good bacteria that lines the gut.

In cookie manufacturing, bakery grade malt extract helps to obtain a smooth, easily formed dough. Cookies made with malt extract remain pleasantly crumbly so that it may even be possible to reduce the fat content.  It gives these cookies an amazing taste and texture.

Well, the use of Malt Extract doesn't  stop at Baked products. It also acts as a nutritious ingredient in the manufacturing of flakes. Flakes Grade Malt Extract is used  to mask the bitter notes of high-fibre formulations. Malt Extract is also used in non alcoholic drinks. Non-alcoholic malt beverages are non-alcoholic drinks that consist of the nutritional content of that of barley.  There are a few non-alcoholic malt beverages that resemble beer in taste, and the only difference remains that these non-alcoholic malt beverages contain zero percent alcohol.
