LIQUID MALT EXTRACT - FAQs

 Malt is the most widely used barley product in the world - it is used as a sweeter in China and Korea, painted on the skin of Peking duck to provide gloss and sweetness;  in the US it is mixed with hot milk to be drunk as malted milk; and in India also it has wide number of food application, particularly cereals( breakfast cereals, biscuits and bread), dairy (hot and cold milk beverage, ice cream) chocolate confectionery, Biscuit Confectionery Grade Malt Extract and of course beer.

Liquid Malt extract is a syrup made from barley grains that are moistened and allowed to germinate. The germination process is a very important step as it helps to convert the starch in the grain into sugars, making a naturally sweet syrup.

What is the difference between malt extract and malt syrup?

There are subtle differences between malt extract and malt syrup - malt extract has a richer malty flavour and is made with just the malted barley grains; whereas while making the syrup, other grains are also added after the germination process, so the flavour is slightly less intense.
 
What is the difference between liquid and dry malt extract? Which one is better?

The primary difference between liquid and dry malt extract is basically the amount of water in each. Because the two types of malt are different in water content, a pound of liquid extract and a pound of dry extract differ in sugar content as well. Therefore, liquid malt extract and dry extract are not always  interchangeable in a recipe. As for the question which one is better…….we can’t actually choose one because both of them have their own pros and cons.
