Malt Whiskey - Malt Whisky is basically the whiskey made only from malted barley and not blended with grain whisky. 



The process of production of single malt Scotch whisky has been going on for generations and is made using traditional ways. It is a craft that has been Handed Down through Generations.

Process of making Malt Whiskey

Malting and Mashing: Single malt Scotch whisky is known for its simplicity and is produced with traditional processes by using natural, raw ingredients: malted barley, fresh spring water, and yeast. The first step in this process involves the malting of barley by steeping it in water and spreading it across a malting floor, allowing it to germinate. This step starts the conversion of starch within the barley into sugars, which mixed with yeast will create the alcohol. Part of the process has an effect on the end flavour of the spirit  such as sometimes the barley is dried over peat, imparting a smokey flavour.

When the malt is dried, it is ground to a coarse flour called ‘grist’, and mixed with hot spring water in a large vessel called a ‘mash tun’. A sweet liquid known as wort is created by dissolving sugar from malt. 

Fermentation and Distillation: Wort basically is the sweet infusion of ground malt or other grain before fermentation, used to produce beer and distilled malt liquors. This resulting product is passed into a large container, called a ‘washback’, where the liquid is fermented by adding yeast which ultimately converts the sugars in the wort into alcohol, creating a liquid called ‘wash’, 

Time for distillation….

Typically single malt Scotch whisky is double distilled in distinctive copper pot stills which is like a  very large kettle heating the liquid inside. The first distillation takes place in the ‘wash’ still where the alcohol vapours first rise to the top i.e. over the head of the still, before they are guided through a condenser as they return to a liquid form.

As a result, a ‘low wine’ gets prepared which then makes its way to the second ‘spirit’ still, where the distillation process repeats itself. High quality spirit is then collected in a locked spirit safe.

Maturation and Release: Now it's time to mature the newly prepared spirit. Mahalaxmi Malt Extract's different spirit provides different flavours to the drink but the real magic happens in oak casks over a number of years ( usually 3 years)
