LIQUID MALT EXTRACT OR DRY MALT EXTRACT - WHAT’S YOUR CHOICE?

 People usually ask us which one is better? Or which one should they consider while brewing, while making biscuits or while making malted milkshakes etc. Today we will help you decide this. But before that you should have a clear picture about what exactly is malt extract.

What is Malt Extract?

The sugar extracted from malted grain, usually barley, is known as malt extract. Malt Extract gives your recipe a sweet, nutty, rich, caramel-like flavour. Along with being tasty, it also has a number of health benefits such as - it contains several vital nutrients which supports the digestive health, helps in maintaining the cholesterol level, acts as a mood booster and also enhances digestibility.

What is LME?

LME, also known as liquid malt extract/ malt extract liquid, is the syrup - like product in which the water and sugar ratio in the syrup is 20% in the former and 80% in the later. This 80% consists of sugar and various unfermented solids which are useful in brewing.

LME has a shelf life of around 2 years when kept in a cool, dry and dark place. It is widely used in brewing, dough making of biscuits and various other bakery and confectionery products.

What is DME?

DME, also known as dry malt extract/ barley malt powder, is the extract whose final product is the dried powder form. In this, the malt extract goes through the process of spray drying by which all the water is evaporated and removed . 

Being in the powdered form, DME is much easier to pack and store. The shelf life of DME is also comparatively more than LME. But everything has its own pros and cons. DME when comes in contact with air, it starts taking moisture which makes the powder to clump and it becomes a hassle to work with.

DME is also widely used in many recipes such as it is used in garnishing milkshakes etc.

As stated earlier both have their own pros and cons. One might be better for one kind of recipe and the other may be better for another kind. In brewing, to find out which one suits you better - you can try both in the miniatures. Do a side by side comparison to find out which gives your tongue the best feel.

Overall, whether its liquid or dry form, both go well with the preparation of beer and various other non-alcoholic malt drinks. But do remember to keep them stored properly and use them fresh.
