BREWING MAGIC: THE WORLD OF MALT UNVEILED

When talking about the art of brewing, there is one of the key ingredients that usually takes the backstage despite its crucial role – malt. Malt is the unsung hero, the magic potion that turns water into beer and adds depth to your favourite whiskey. Let’s embark on a journey through the fascinating world of malt, exploring its history, types, and the intricate brewing process.

1. The Origin Story

Malt's story begins with ancient civilizations, where our ancestors discovered the art of malting grains. Egyptians and Sumerians were among the first to cultivate barley and transform it into barley malt. Over centuries, malted grains became an integral part of diverse culinary traditions, evolving from early bread-making to the sophisticated world of beverages.

2. Types of Malt

Malt comes in various types and forms, each lending unique characteristics to the final product. From pale malt, which imparts a light colour and mild flavour, to caramel malt, adding sweetness and a golden hue, and roasted malt, providing rich dark tones and coffee-like bitterness. Exploring this spectrum of malt opens the door to a myriad of flavours and aromas.

3. The Brewing Alchemy

The brewing process is where malt truly shines. Malted grains, typically barley, are soaked, germinated, and dried to create malt. During brewing, the malt is mashed with hot water, activating enzymes that convert starches into fermentable sugars. This sugary liquid, known as wort, is the foundation of beer. Yeast then joins the party, fermenting the wort into alcohol, producing a wide array of beer styles from lagers to ales.

4. Beyond Beer: Malt in Whiskey and More

While malt is synonymous with beer, its influence extends far beyond the brewing kettle. In the world of whiskey, malted barley is a cornerstone ingredient, creating the distinctive character of single malt Scotch and other renowned whiskies. Malt extract also finds its way into the kitchen, enriching sauces, baked goods, Malt based food, Malted milk food and even desserts with its unique sweetness and depth.

5. The Future of Malt

As the culinary world continues to evolve, so does the use of malt. Craft brewers experiment with innovative malting techniques, and chefs incorporate malt into creative dishes. The future promises exciting possibilities, from unique malt varieties to sustainable malting practices, shaping the way we experience flavours in the years to come.

In essence, malt is not just an ingredient; it's a storyteller, weaving tales of ancient civilizations, cultural traditions, and the artistry of brewing. Kilning: Germination is halted by carefully drying the grains in kilns. The temperature and duration of kilning play a crucial role in determining the colour, flavour, and aroma of the resulting malt. Different types of malt/malted milk foods/malt based food, such as pale, caramel, and chocolate malts, are created through variations in kilning.

After grain steeping is done ,bring a kettle to boil and once it is done remove the kettle from heat and add malt extract (Making of malt extracts can be a tedious process so brewers use Malt Extract/Liquid Malt Extract/Malt Extract Powder in India of Mahalaxmi Malt Products Private Limited to brew). After the malt extract is dissolved, boil it again. After it is boiled, add hops to it. Cool down the resulting product - the sugar water, also known as wort.

Step 3 - Fermentation

Third step involves pouring cooled wort into the fermenter. Add water, Aerate wort and finally add yeast (preferably dry yeast) to the fermenter and seal it air tight.

Step 4 - Bottling

Within two weeks, fermentation will be done and that is when the final step of bottling will take place. Boil the primary sugar and then add it directly to the bottle after it cools down. Then siphon the beer out of the fermenter into the bottling bucket. Finally cap the bottles and store the bottles.

Bingo! You did it. Time to refrigerate it and enjoy.

GIVE YOURSELF A TREAT OF WHEAT | MALTED VS. UNMALTED WHEAT GRAIN

Wheat is a cereal grain which is widely grown and consumed all around the world. The major components of wheat are proteins, starch and cell wall polysaccharides which together account for a major portion of wheat. The rest is the combination of minor components such as vitamins, minerals, etc. Wheat malt grain is most commonly used in malt extract liquid/ Liquid Malt Extract, muffins, breads, noodles, pastries, crumpets, biscuits, cakes, , Biscuit Confectionery Grade Malt Extract, cereal bars, sweet and savoury snack foods, sauces, brewing and various other alcoholic and nonalcoholic beverages,

Beer and beverages use both malted and unmalted wheat grains depending on requirements. But ever wondered how malted wheat grains are different from unmalted wheat grains?

Malted Wheat

The diastatic enzymes present in malted wheat helps convert starch into sugars during mashing which gives it a unique flavour and makes it a creamy, doughy tasting wheat flour. Similar to barley malt, the flavour compounds are developed during the process of kilning. Grains go through the process of steeping, germination and killings before they are used by brewers.

Unmalted Wheat

Unlike Malted wheat, it does not undergo any process of malting which is why it is known as the raw version of wheat. The amount of starches are same to that of malted wheat but unmalted wheat can not convert starches into sugars by itself. For sugar conversion, it needs to be mashed with base malt.

Malted Vs. Unmalted wheat

Process - Malted Wheat is fully modified wheat and thus becomes malted grains whereas unmalted wheat is not modified and thus needs extra efforts to convert scratch to sugars for brewing.

Self-Conversion - Malted Wheat can get self converted due to the availability of diastatic enzymes. On the other hand, unmalted wheat can not go through self conversion.

Flavour - Unmalted wheat makes fuller beers which are less sweet and have a refreshing taste. It has strong flavour and is used for adding flavour, cloudiness and creamy texture to the beer. On the other side, Malted wheat has a citrusy and acidic taste which gives it a complex flavour.

Both these types have their own pros and cons and are used as per needs. As now you know the difference between malted and unmalted wheat grain - Use whichever fits the best to your needs.

LIQUID MALT EXTRACT OR DRY MALT EXTRACT - WHAT’S YOUR CHOICE?

People usually ask us which one is better? Or which one should they consider while brewing, while making biscuits or while making malted milkshakes etc. Today we will help you decide this. But before that you should have a clear picture about what exactly is malt extract.

What is Malt Extract?

The sugar extracted from malted grain, usually barley, is known as malt extract. Malt Extract gives your recipe a sweet, nutty, rich, caramel-like flavour. Along with being tasty, it also has a number of health benefits such as - it contains several vital nutrients which supports the digestive health, helps in maintaining the cholesterol level, acts as a mood booster and also enhances digestibility.

What is LME?

LME, also known as liquid malt extract/ malt extract liquid, is the syrup - like product in which the water and sugar ratio in the syrup is 20% in the former and 80% in the later. This 80% consists of sugar and various unfermented solids which are useful in brewing.

LME has a shelf life of around 2 years when kept in a cool, dry and dark place. It is widely used in brewing, dough making of biscuits and various other bakery and confectionery products.

What is DME?

DME, also known as dry malt extract/ barley malt powder, is the extract whose final product is the dried powder form. In this, the malt extract goes through the process of spray drying by which all the water is evaporated and removed .

Being in the powdered form, DME is much easier to pack and store. The shelf life of DME is also comparatively more than LME. But everything has its own pros and cons. DME when comes in contact with air, it starts taking moisture which makes the powder to clump and it becomes a hassle to work with.

DME is also widely used in many recipes such as it is used in garnishing milkshakes etc.

As stated earlier both have their own pros and cons. One might be better for one kind of recipe and the other may be better for another kind. In brewing, to find out which one suits you better - you can try both in the miniatures. Do a side by side comparison to find out which gives your tongue the best feel.

Overall, whether its liquid or dry form, both go well with the preparation of beer and various other non-alcoholic malt drinks. But do remember to keep them stored properly and use them fresh.

CLASSES OF MALT at mahalaxmimaltextract.com

Malt is a substance that is made from barley or other grains by soaking them in the water till they sprout and then undergoes the process of kiln-drying. Malt is a product which is widely used for brewing as one of the main ingredients. Other than brewing, malt is also commonly used as bakery grade malt extract, confectionery grade malt extract, Pharma grade malt extract, flakes grade malt extract, biscuit confectionery malt extract etc.

Malt Extract are available in two forms : Liquid Malt extract (LME) and Dried Malt Extract (DME)/Barley malt powder. Both these forms are used in different recipes as per the requirements and have their own pros and cons. Malt is also divided into various classes:

Standard Malt Extract:

It is a grain-based sweetener or starch based sweetener. This has been used in bakery and other food processing since long ago. It is produced by mixing malt grains with water which allows the enzymes to break down the starch. Insoluble fibre is then removed and the resulting product will be a sugary liquid which can either be used in brewing or can be concentrated to make LME or DME.

Speciality and Black Malt Extract:

Beer comes in a variety of colours and flavours such as amber, dark stouts etc. Specialty malts have comparatively a wide range of flavours, colours and sweetness because of which they are widely used in bakery. The major role they have in bakery is of flavouring, and colour agent, sweetening agent, yeast food and enzyme source. Selecting the right malt extract will be like a cherry on the cake for your recipe.

CoExtracts of Malt and Various other cereal grain:

Other scratch sources other than malt can also be converted into extracts by using malted barley as a source of natural enzyme to make a comparatively light flavoured syrup. Usually, raw barley or corn is used to make these malt extracts.

Other than this, malt is divided in various other classes such as Barley malt, Black malt, Larger, Caramel, Biscuit malt, Glenfiddich, Briess Rye Malt, Crystal Malt, Wheat Malt, Pale Ale, Cara pils, Aromatic Malt, Ale, Honey Malt, Pale Ale Malt, Pilsner Malt, Brown malt, Barley malt syrup, Maris Otter etc.

Larger malt is the most suitable when it comes to brewing and it is always easier to buy and use. When it comes to Base malt then the most commonly used is the Pale Malt.
